Recipe: Turmeric Roasted Eggplant

Turmeric Roasted Eggplant

Gluten Free, Vegan, Paleo

Ingredients

  • 2 medium sized eggplants

  • 1/2 cup olive oil

  • 1 tsp ground turmeric

  • 1 tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1/4 tsp salt

Directions

  • Preheat oven to 400 degrees

  • Cut eggplant into thin slices

  • Mix olive oil, turmeric, nutritional yeast, garlic powder and salt together

  • Coat each side of the eggplant with the mixture and place onto parchment paper on baking sheet

  • Throw into the oven for 25 min and flip them half way through. broil for the last 2 min if you want them extra crispy!
