Recipe: Turmeric Roasted Eggplant
Turmeric Roasted Eggplant
Gluten Free, Vegan, Paleo
Ingredients
2 medium sized eggplants
1/2 cup olive oil
1 tsp ground turmeric
1 tbsp nutritional yeast
1 tsp garlic powder
1/4 tsp salt
Directions
Preheat oven to 400 degrees
Cut eggplant into thin slices
Mix olive oil, turmeric, nutritional yeast, garlic powder and salt together
Coat each side of the eggplant with the mixture and place onto parchment paper on baking sheet
Throw into the oven for 25 min and flip them half way through. broil for the last 2 min if you want them extra crispy!
