Recipe: Roasted Purple Sweet Potatoes
Roasted potatoes are one of my absolute favorite things to make. They are such a warm, filling, and easy to digest food that I make on the regular. I found these organic purple sweet potatoes at the store and with the right seasoning, they are pure heaven. Hope you enjoy!
Roasted Purple Sweet Potatoes
Gluten Free, Vegan, Paleo
Ingredients
4 small-medium sized purple sweet potatoes
1/2 yellow onion
3-4 tbsp olive oil
Sprinkle of salt
Dried parsley
Dried oregano
Nutritional Yeast
Directions
Preheat oven to 400 degrees
Cut up sweet potatoes into small cubes (or whatever size/shape you prefer) + 1/2 yellow onion and place into a bowl.
Add in the olive oil, salt, parsley, oregano, and nutritional yeast. For the parsley, oregano, and nutritional yeast, sprinkle enough to cover the top of the potatoes (shown in picture)
After mixing it all together, put parchment paper on top of baking dish and spread out potatoes.
Throw into the oven for about 30 min tossing it around half way through. I like to broil it for the last 2-3 minutes to get that extra crisp. The smaller the potatoes are cut, the quicker they will cook!
