Grilled Zucchini & Avocado Tortilla

Ingredients:

  • 2 zucchini and/or summer squash

  • Avocado mash (2 avocados) with added chopped tomatoes, onions, lemon juice, salt & pepper

  • Chickpea tortilla (I used Siete Foods)

Directions

  • Slice zucchini/summer squash into medium-thin pieces and season with lemon juice, salt, pepper & optional olive oil.

  • Throw on the grill about 5 min or less on each side.

  • Mash up avocado & any added ingredients you’d like (I used chopped tomatoes, onion, lemon juice, salt & pepper)

  • Spread avocado mash on the tortilla, cut up grilled zucchini and add on top.

  • Wrap it up & enjoy!
