Grilled Zucchini & Avocado Tortilla
Ingredients:
2 zucchini and/or summer squash
Avocado mash (2 avocados) with added chopped tomatoes, onions, lemon juice, salt & pepper
Chickpea tortilla (I used Siete Foods)
Directions
Slice zucchini/summer squash into medium-thin pieces and season with lemon juice, salt, pepper & optional olive oil.
Throw on the grill about 5 min or less on each side.
Mash up avocado & any added ingredients you’d like (I used chopped tomatoes, onion, lemon juice, salt & pepper)
Spread avocado mash on the tortilla, cut up grilled zucchini and add on top.
Wrap it up & enjoy!
