Baked Sweet Potato with Crunchy Chickpeas & Tahini Drizzle

Ingredients

  • Sweet potato

  • 1 can chickpeas

  • Salt

  • Pepper

  • Paprika

  • Garlic powder

  • Avocado oil

  • Tahini

  • Maple syrup or honey (optional) 

Directions

  • Heat oven to 415 and throw in whole sweet potato for about 45-60 min depending on the size.

  • Drain & rinse chickpeas from the can and add to a bowl. add in 2 tbsp avocado oil & sprinkle of salt, pepper, paprika, garlic powder, and 1-2 tbsp maple syrup/honey if you’d like.

  • Mix everything together & spread evenly on a baking sheet with parchment paper. throw into the oven when the sweet potato is about half way done.

  • Let them cook about 20-25 min and then 2-3 min on broil if you want them extra crunchy.

  • Once potato & chickpeas are done, slice potato in half, top with chickpeas, and drizzle some tahini over it!
