Tomato & Mushroom Pesto Pasta
Ingredients
Pasta (I used Jovial Foods brown rice pasta)
1 cup cherry tomatoes
1 cup baby bella mushrooms
Pesto (I used Glaser Organic Farms Spinach Pesto)
2-3 fresh basil leaves
Avocado oil
Directions
Slice up cherry tomatoes & mushrooms.
Heat up some avocado oil in a pan & sauté mushrooms & tomato.
While the veggies are cooking, boil pot of water for the pasta. once pasta is added & cooked, drain & add to the pan with the veggies.
Add a few scoops of your favorite pesto and mix it all up.
When ready to serve, chop up a few leaves of fresh basil and add it on top of the pasta dish.
You can add some lemon juice & salt for extra pop of flavor! (optional)
