Cauliflower & Chickpea Sheet Pan

Ingredients

  • 1 head cauliflower

  • 1 can chickpeas

  • Paprika

  • Salt

  • Taco seasoning

  • Garlic powder

  • Avocado oil

  • Pure maple syrup

Directions

  • Heat oven to 400 degrees.

  • Cut up cauliflower head into small florets. Drain + rinse chickpeas from the can and add to a big bowl with the cauliflower.

  • Add about 2-3 tbsp avocado oil, 2-3 tbsp pure maple syrup, and strong sprinkle of salt, paprika, taco seasoning, and garlic powder. For the spices, I add enough to lightly cover the top of everything.

  • Mix everything up and evenly distribute on baking sheet with parchment paper.

  • Roast in the oven for 20 min & another 5-6 min on broil depending on how crispy you want them. SO GOOD!
