Cauliflower & Chickpea Sheet Pan
Ingredients
1 head cauliflower
1 can chickpeas
Paprika
Salt
Taco seasoning
Garlic powder
Avocado oil
Pure maple syrup
Directions
Heat oven to 400 degrees.
Cut up cauliflower head into small florets. Drain + rinse chickpeas from the can and add to a big bowl with the cauliflower.
Add about 2-3 tbsp avocado oil, 2-3 tbsp pure maple syrup, and strong sprinkle of salt, paprika, taco seasoning, and garlic powder. For the spices, I add enough to lightly cover the top of everything.
Mix everything up and evenly distribute on baking sheet with parchment paper.
Roast in the oven for 20 min & another 5-6 min on broil depending on how crispy you want them. SO GOOD!
