Recipe: Oven Roasted Cauliflower & Brussels Sprouts

If you haven’t noticed already, I’m veggie obsessed! It’s a RARE scene if you ever see me eating a lunch or dinner without loads of veggies on my plate. I’m also a huge fan of simple recipes that don’t take too long, have minimal ingredients, and keep the taste of the actual vegetable. Add them as side dishes to your meals, throw them in salads, or eat solo. If your plate needs some color, look to these beauties for an extra pop!

Oven Roasted Cauliflower & Brussels Sprouts

Gluten Free, Dairy Free, Paleo, Vegan, Vegetarian

Ingredients

  • 1 bunch brussels sprouts

  • 1 cauliflower head

  • Avocado oil

  • Salt

  • Garlic Powder

Directions

  • Preheat oven to 400 degrees. Lay parchment paper over a baking dish.

  • If brussels are small, leave as is, but if the brussels are large, cut in half.

  • Cut cauliflower head into florets. Combine brussels & cauliflower into bowl.

  • Drizzle avocado oil (about 3 tbsp, but add more or less). Sprinkle salt + garlic powder. Mix all together.

  • Throw in the oven for about 30 min. If you like it crispy, broil for the last 5 min. Enjoy!
