Recipe: Split Pea Soup
Split Pea Soup
Gluten Free, Dairy Free, Vegan, Paleo
Ingredients:
1 package dried peas 24 oz. (I use Aurora Naturals)
6 full sized carrots
6 full sized celery stalks
1/2 medium yellow onion
3 tbsp avocado oil (olive oil works too)
4 cups vegetable stock (I use More Than Gourmet Vegetable Stock)
Optional: garlic powder, nutritional yeast, salt
Directions:
Peel carrots, wash celery, and chop both into small pieces. Peel onion, cut in half, and chop one half into small pieces.
Heat a large pot on the stove on medium heat. Add 3 tbsp avocado oil to the pot and add in the chopped carrots, celery, and onion. Saute for about 5 min until golden.
Add in vegetable stock and 4 cups of water.
Add in full bag of dried peas.
** Optional - I sprinkled in some salt + garlic powder, but feel free to skip if you avoid.
Stir everything together. Keep on medium heat until it begins to boil. Once it begins to boil, lower heat to simmer and cover the pot with lid.
Let it simmer for about 45 min - 1 hour.
Add everything to a blender & puree. You may have to do half at a time unless you have a massive blender!
Once pureed, add back to the pot and it’s ready to be served.
I personally like to sprinkle some nutritional yeast on top!
