Recipe: Maple Roasted Acorn Squash

Maple Roasted Acorn Squash

Gluten Free, Vegan, Paleo

Ingredients:

  • 1 acorn squash

  • 1.5 tbsp avocado oil

  • 1 tbsp pure maple syrup

  • Salt

  • Cinnamon

Directions:

  • Preheat oven to 400 degrees

  • Wash squash. Cut stems off. Slice in half & scoop out seeds in the middle. Slice squash into strips (see images).

  • Put squash into a bowl and add in avocado oil + maple syrup. Mix together.

  • Put parchment paper onto a baking dish and place squash onto the sheet. I placed each slice sideways on the sheet.

  • Sprinkle salt first and then cinnamon onto all the squash slices.

  • Place into the oven for about 20-25 min.

  • Ready to serve! Feel free to eat with the skin on or it can easily be peeled off.
