Recipe: Mediterranean Chilean Sea Bass

People often steer away from cooking fish on their own because they either don’t know the best way to prepare it or think it’s too complicated. I personally think fish is one of the easiest things to make because it tastes best with very minimal & simple ingredients (as long as it’s a nice fresh piece!) This Mediterranean style Chilean Sea Bass is must try!

Mediterranean Chilean Sea Bass

Gluten Free, Paleo, Dairy Free, Grain Free

Ingredients

  • 2 pieces of wild-caught Chilean Sea Bass (each piece about 5-6 oz.)

  • 1/2 cup grape tomatoes (can add more or less)

  • 1/4 cup kalamata olives (can add more or less)

  • 2 tbsp olive oil

  • 1/2 lemon juice

  • 3 tbsp white cooking wine (enough to lightly cover the baking dish)

  • 2-3 sliced shallots

  • 3 chopped garlic cloves

  • Sprinkle of salt

Directions

  • Preheat oven to 375

  • In a clear baking dish, combine white cooking wine, olive oil, and lemon juice to lightly coat the bottom of the dish.

  • Evenly distribute the shallots, garlic gloves, tomatoes, and olives around the dish.

  • Place the pieces of sea bass in the middle of the dish and sprinkle with salt, garlic powder, and drizzle of additional lemon juice.

  • Cover & place in the oven for about 25 min.

  • Take off cover & put on broil for the last 3-5 min to get a little crisp on top.

  • When ready to serve, top each piece of sea bass with juices & tomatoes/olives. Enjoy!
