Recipe: Mediterranean Chilean Sea Bass
People often steer away from cooking fish on their own because they either don’t know the best way to prepare it or think it’s too complicated. I personally think fish is one of the easiest things to make because it tastes best with very minimal & simple ingredients (as long as it’s a nice fresh piece!) This Mediterranean style Chilean Sea Bass is must try!
Mediterranean Chilean Sea Bass
Gluten Free, Paleo, Dairy Free, Grain Free
Ingredients
2 pieces of wild-caught Chilean Sea Bass (each piece about 5-6 oz.)
1/2 cup grape tomatoes (can add more or less)
1/4 cup kalamata olives (can add more or less)
2 tbsp olive oil
1/2 lemon juice
3 tbsp white cooking wine (enough to lightly cover the baking dish)
2-3 sliced shallots
3 chopped garlic cloves
Sprinkle of salt
Directions
Preheat oven to 375
In a clear baking dish, combine white cooking wine, olive oil, and lemon juice to lightly coat the bottom of the dish.
Evenly distribute the shallots, garlic gloves, tomatoes, and olives around the dish.
Place the pieces of sea bass in the middle of the dish and sprinkle with salt, garlic powder, and drizzle of additional lemon juice.
Cover & place in the oven for about 25 min.
Take off cover & put on broil for the last 3-5 min to get a little crisp on top.
When ready to serve, top each piece of sea bass with juices & tomatoes/olives. Enjoy!
