Broccoli Rabe Lentil Pasta

Ingredients

  • 1 bunch broccoli rabe

  • 1 box lentil pasta (I used Tolerant Foods)

  • 2 tbsp olive oil

  • 4-5 garlic cloves

  • Salt

Directions

  • Trim the ends of the broccoli rabe. fill medium/large pot with water about half full & bring to a boil.

  • Once boiling, throw in broccoli rabe for about 1-2 min to soften. strain broccoli rabe and run cool water over it to stop from cooking further.

  • In the same pot, add 2 tbsp olive oil over medium heat & chop up 4-5 garlic cloves to throw in with oil.

  • Once garlic gets golden, add broccoli rabe and sprinkle some salt. mix & let it sauté for 10 min.

  • Fill another pot & bring to a boil for the pasta. throw in pasta & let it cook.

  • Once pasta is ready, drain and add pasta to the pot with broccoli rabe. mix everything together & add a little more olive oil + salt if necessary.

  • Sprinkle nutritional yeast on top for a little cheesy flavor!
